Beef Brisket

3 to 4 Nicely Ripe Peaches (sliced in half and pit removed)
1 Tbsp - Light brown sugar for each peach half
1/2 of a lime
Warmed honey for drizzling

 

Place peach halves on a plate or tray cut side up.  Place 1 Tbsp of light brown sugar on the cut side of the peach where the pit used to reside.  Repeat for all halves.  Let them sit for about 30-45 minutes until the sugar has melted.  Bring your grill up to 350 degrees. Place the peaches on the grill skin or round side down and grill for 10-15 minutes. Turn and grill cut side down for 2 to 4 minutes until the sugar has nicely caramelized. When you pull them off of the grill hit them with a few drops of fresh lime juice and then a good drizzle of warmed honey.

Serve warm.

These really go well with chicken and pork.
