Great Baked Potatoes
Ingredients
Russet Potatoes or Yukon Gold Potatoes or whatever your
favorite potato is
Olive Oil to coat
Fresh Cracked Pepper
Kosher Salt
Preparation
Pour a little Olive Oil in the bottom of a mixing bowl. Place the potato in the bowl and roll it in the oil to coat. You don't want the potato drenched just a nice coating. Place the potato on a sheet pan or baking sheet. Finish coating the remaining potatoes.
Now Crack the pepper on the potatoes. Add a nice pinch of Kosher salt to each potato. Now turn the potatoes over and repeat the pepper and salt steps. There is no need to wrap them in foil.
Baking
Preheat the oven or grill to 425 degrees. Place the sheet pan or baking sheet in the oven with the rack set in the middle and set the timer for 45 minutes.
If you're doing them on the grill place the potatoes around the perimeter of the grill so they are not directly over the fire. Let them bake and turn them every 15 minutes or so to keep the skin from burning. The fire will determine how long it takes to bake them. When they are soft they're ready to pull.
