52oz Prime Porterhouse

WOW what a steak!!!

Ingredients:
• 52oz Prime Porterhouse
• Kosher Salt
• Fresh ground black pepper
• Extra virgin olive oil

Preparation Directions:
• Rub the steak down with EVOO then add a good coat of kosher salt and fresh ground black pepper. Keep it simple.

The Cook:
• Start the lump and let it crank up to 550-600 degrees or more. Place the steak on the cooker to sear, leaving the dome open. Sear the steak for about 3 minutes per side giving the steak a half turn mid way through the sear on each side for nice sear marks. After the sear pull the steak and place on a platter for 18-20 minutes to rest. During the rest bring the grill down to 400 degrees.

The Cook (after the rest):
• After the rest place the steak back on the cooker at 400 degrees for about 6-8 minutes per side. Close the dome during this phase. Watch the steak carefully checking the temp to ensure that it does not over cook. For a medium rare steak pull it at 135-140, medium 145-150 and so on. I think anything above medium is just a shame.
